The Oxford Dictionary of Music lists only 2 works that Mahler orchestrated of Beethoven's works. These two pieces are Beethoven's String Quartet in F Minor Op. 95, and String Quartet in C# Minor Op. 131, both orchestrated for String Orchestras.
Check tower record's website http://www.towerrecords.com for availability of recordings.
In addition to the Beethoven pieces, one of my absolute favorite Mahler orchestrations is the Schubert String Quartet in D Minor (Death & the Maiden). My favorite recording of this piece is on the Harmonia Mundi label, CD #3903025, with the Orchestre de Chambre Ferenc Liszt, with Janos Rolla conducting.
